Sunday Social


1. Favorite type of work out to do?
I've been doing a lot of at home workouts lately . My favorite at the moment is the Biggest Loser Workout : Calorie Knockout ( extreme cardio for maximum burn ) 



2. Favorite guilty pleasure candy or sweet?
Twizzlers are my guilty pleasure. I can't just eat one but now that I ive started my weight loss journey I haven't ate one at all  .. And I miss them lol 


3. What is one thing you continuously forget to do?
Writing down my meals each day . I use My Fitness Pal . And I miss so many days or  I would post break fast and lunch and forget dinner 



4. Posts its or phone reminders? Why?
I do both ! I have to use both if I really want to remember . Sad but true. I have post its on my the back of my front door so I wont walk out the house with stuff or run an errand 


5. Favorite picture currently on your phone that always makes you smile

Yes , he is one of my favorite Youtuber and also the background on my phone.
Every time I click on my phone I smile just looking at his face!

Dear Christian Life Center ( CLC ) ,  Thank you for welcoming me 3 years ago . I have never felt so much love from a church before . I've met some wonderful people while being there . I thank GOD for all of them . Happy Birthday CLC . I can't wait to see what the next 23 years has in store !

Meatless Monday

So I'm trying something new !

Yes Meatless Monday !
I've been hearing about Meatless Monday 
I've been looking up a lot of recipe ideas and I wanted to share some of my favorites with you . 
( none of the recipes are my mine ! ) 

1. Mac and Cheese 

2 cups small dried pasta, like small shells or elbow noodles (about 8 oz.)
2.25 – 2.5 cups milk (I used 1%)
1 Tbsp. butter
1/2 tsp. dry mustard
1 tsp. salt
1.25 cups loosely packed shredded cheese (I used a combo of extra sharp cheddar and fontina)
Place the dried pasta in a colander and rinse under cold water quickly; let drain. In a medium saucepan, add 2.25 cups milk, butter, dry mustard, salt, and rinsed pasta.
On medium heat, slowly bring the mixture to a simmer, stirring often. Once the mixture comes to a simmer, reduce the heat to low. Continue cooking the pasta, stirring frequently, so that the pasta doesn’t stick and cooks evenly. Cook for about 15-20 minutes, until nearly all nearly all the milk has been absorbed and pasta is cooked. If additional milk is needed, add a couple tablespoons at a time.
Stir in the cheese evenly, cover, and remove from heat. Allow to stand for about 5 minutes. Stir once more and season to taste if necessary before serving.

2. Vegetarian Chili


  • 2 medium-sized sweet potatoes,(approximately 500g)
  • 1 level teaspoon cayenne pepper, plus extra for sprinkling
  • 1 heaped teaspoon ground cumin, plus extra for sprinkling
  • 1 level teaspoon ground cinnamon, plus extra for sprinkling
  • olive oil
  • sea salt and freshly ground black pepper
  • 1 onion
  • 1 red pepper
  • 1 yellow pepper
  • a bunch of fresh coriander
  • 1 red chilli
  • 1 green chilli
  • 2 cloves of garlic
  • 2 x 400g tins beans – try kidney, chickpea, pinto, cannellini
  • 2 x 400g tins chopped tomatoes
Directions:
  1. Preheat the oven to 200˚C/400˚F/gas 6.
  2. Peel the sweet potatoes and cut into bite-sized chunks. Sprinkle with a pinch each of cayenne, cumin and cinnamon, drizzle with olive oil and scatter with a pinch of salt and pepper. Toss to coat then put them on a baking tray.
  3. Peel and roughly chop the onion. Halve, deseed and roughly chop the peppers. Pick the coriander leaves and put aside, finely chop the stalks. Deseed and finely chop the chillies. Peel and finely chop the garlic.
  4. Put the tray of sweet potato in the hot oven to cook for 40 minutes until soft and golden.
  5. Put a large pan on a medium-high heat and add a couple lugs of olive oil. Add the onion, peppers and garlic and cook for 5 minutes. Add the coriander stalks, chilli and spices and cook for another 5 to 10 minutes, stirring every couple of minutes.
  6. Drain the cans of beans, then tip them into the pan with the tinned tomatoes. Stir well and bring to the boil, then reduce to a medium-low heat and leave to tick away for 25 to 30 minutes. Keep an eye on it, and add a splash of water if it gets a bit thick.

3. Eggplant - Succhini Lasagna with Fontina 


Ingredients
About 1/2 cup olive oil
1 large eggplant, cut into 1/2 inch-thick slices
2 large zucchini, cut on the diagonal into 1/2-inch thick slices
Kosher salt
7 plum tomatoes
2 cloves garlic, minced
1/2 pound no-boil lasagna noodles
12 ounces whole-milk ricotta
1/2 teaspoon dried oregano
6 ounces fontina, grated
2 tablespoons freshly grated Parmesan
Preheat the oven to 400°F.
In a medium bowl, toss the zucchini with 1 tablespoon olive oil and about 1/2 teaspoon salt. Place in a single layer on a baking sheet in the oven and roast for 15-20 minutes, until very brown. Remove and let cool. As soon as the zucchini is in the oven, use the same bowl to toss the eggplant with 2 tablespoons olive oil and 3/4 teaspoon salt, making sure all slices are coated (you may need a little bit more). Place the eggplant in a single layer on another baking sheet and roast for 20-25 minutes until cooked through and browned. Set both vegetables aside.
Bring a small pot of water to the boil. Stick the tomatoes in for 1 minute, then remove with tongs and let cool on the countertop for about 5 minutes, until you can handle them. Trim them and pull off the skin (it should slide off easily; discard it), then use your fingers to break up the flesh. Place in a small bowl and combine with the minced garlic, 2 teaspoons olive oil, and about 1/2 teaspoon salt. Taste the tomatoes: you want them to be very well seasoned, so add a bit more salt if necessary.
In a small bowl, combine the ricotta with oregano and 3/4 teaspoon salt and stir to mix.
In a 10-inch round skillet, pour about 1/2 cup of the tomato mixture. Layer with noodles, breaking them to fit the pan. Top with the eggplant in one layer, then spread on half of the ricotta. Sprinkle with a quarter of the fontina and another 1/2 cup of sauce. Repeat this pattern once, using the zucchini instead of eggplant. (That is, noodles, zucchini, the rest of the ricotta, a quarter of the fontina, 1/2 cup of sauce.) Place another layer of noodles, then dice any leftover eggplant or zucchini and sprinkle on top. Spread with the remaining sauce, then top with the remaining half of the fontina.
Cover with foil and bake for 20 minutes, then uncover, sprinkle with the Parmesan, and bake another 25 minutes, until the cheese is browned and bubbly. Let the lasagna rest 10-15 minutes before cutting into squares and serving.

Sunday Social

Hey Ladies I know it been a couple of week since I did a Sunday Social 
But I'm Back !!!!!!


Sunday Social
1. What is your favorite thing about Spring?

I love spring the colors and the flowers its so pretty . Its not to warm the weather   is just right for me . 
2. Favorite kind of flowers to grow or receive?

I love tulips ! Tulips is such a beautiful flower and they come in so many different colors 

3. What is your favorite nail polish color?
My go to nail colors are pink , black , red , mint green !! 






4. What is your favorite out door activity?
I love spending a day at the part with my little cousins ! 
Playing on the swings with them  , chancing them around .
But another things out door activity i love is playing soft ball. 
Softball is so much fun . Especially when your are just playing for fun with friends and family ! 


5. Do you have any fun Spring plans? Details:)

This  Spring I plan on doing more workouts outside and the biggest thing I have planned for the spring is The Fall Out Boy concert I'm going to in the spring with my brother and cousin Taylor ! 

This week Sunday Social was fun !

My Weight Loss Thoughts 1

So many times I tried to lose weight and it wasn't successful ! 
For once I'm losing weight for myself 
In past I would do it for my mom or if someone made a negative comment about my weight 
But this time its different . 

I've officially have lost a total of 23 pounds
On February 21 ,2013 i weighed in at 345 and today I weigh 322

23 is such a VICTORY . 
I feel so happy
I know I have long journey ahead but I'm excited to see the end results
I'm already seeing a big difference . For example , I can do an extra miles on the bike , I don't get as tired as I use to . 
I have changed my eat habits dramatically .
And honestly I feel more refreshed 


I will be writing my weekly thoughts but if i feel the need to write one in the middle of the week I will write one
This is just some random thoughts I have about my journey and I will keep you all updated

Dear South Beach , I can't wait to visit you next summer , with my bestie Ashley . We are determined to be there next summer to celebrate our 10 years . I'm in the gym preparing now lol ! 

Dear " Say Yes To The Dress "  and Pinterest , Stop giving me wedding fever . This single girl has her wedding dress picked out and wedding planned and no man in her life. .. Shame on you ! 

Dear Ashley , Thank you for being a great sister. You have really been here for  me distracting me from the craziness called my life and always having such amazing things to say when I am down !

Dear Weight Loss Journey , You and I have a love hate relationship. We have started but never finished . Untitled feelings Part 1 .

This past month has an emotional roller coaster . With my mom in the hospital and other events that recently happened my emotions have been all over the place . It feels like nobody understands how I'm feeling . Lately I've been feeling more attacked then cared for. I guess other people's way of caring is different than mine . I don't try to hurt others feeling but honestly no matter what I do or say will be taking the wrong way . When I just want to sit in a corner and cry . But I keep a strong face for my mother and not try to show any emotions .

I hold in all my emotions but I feel like I'm going to burst . I'm being told " Don't stress out you mom" but yet every time something happens someone runs back to mother and tell how I didn't say " thank you " enough , or how me keeping to myself is having attitude . My mother is in a nursing home , can't walk , with cancer on some many parts of her body I lost count . But you want that upbeat happy Brittany . " no " your not going to get her . My heart is broken . My mother is not well and I want is her home healthy and walking .

My family has been amazing when it comes to getting my house together and painting the bedroom an amazing color for my mother . Things are really coming along . But the feedback I'm getting from my mom is that I don't appreciate it . But I'm constantly thanking them . I don't know what more I can do ! I love my family I just they understood where I was coming from.

I know they love my mother but its just a different type of love I have for her . I am her she is me I came from her and no one will ever have our bond .

This will probably be a ongoing series . Sorry if it depressing but I just gotta get this off my mind and heart .
And sorry for no Sunday Social today I wasn't in the mood .
